Braised Chicken Egg Noodle Soup as it should be aptly called. I call it Chicken Mami because that’s how we call noodle soup in the Philippines.

Braised Chicken Egg Noodle Soup

The chicken was not boiled. I braised it in soy, sugar and some spices. This adds a different flavor to the usual Chicken Mami that we know.

You can use any vegetables you want. Cook it straight in the broth to save some time. I decided to saute mine. Not sure why but that’s what I did.

Reserve the sauce from the braised chicken and drizzle over the soup for more flavor.

Ingredients
 

Braised Chicken

  • 250 grams chicken breast (sliced)
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 small onion (minced)
  • 2 cloves garlic (minced)
  • ½ cup water

Soup:

  • 5 cups water
  • 1 small onion (sliced)
  • 2 chicken bouillon cubes
  • 200 grams egg noodles
  • salt and pepper to taste

Garnish

  • 1 head garlic (minced)
  • 1 small carrot (julienned)
  • half napa cabbage (cleaned and sliced)
  • green onions (minced)
  • hard boiled eggs (sliced)
