This spam fried rice is a quick and easy recipe you can make in less than 15 minutes! The luncheon meat is stir-fried in hoisin sauce to give it a hint of char siew flavor then stir-fried with egg and day-old rice to bring it all together.
2tspchicken powderor half chicken bouillon diluted in 2 tbsp hot water

Instructions
Prepare all the ingredients. Start by slicing spam into small cubes. Slice the onion leaves, and garlic; beat the eggs in a bowl.
Heat 2 tbsp of oil in a pan. Add garlic and green onions. Stir-fry until fragrant. Add the cubes of spam. Cook until lightly brown. Pour 1 tablespoon of hoisin sauce and stir until each piece is coated. Make a well in the center. Pour half of the beaten egg then quickly stir-in the day-old rice.
Pour remaining hoisin sauce, oyster sauce and sprinkle the chicken powder directly into the rice. Stir until combined.
Push the rice to the side of the wok. Add a little bit of oil and shift the wok over the heat. Pour the remaining egg. Cook, it through. Add the remaining green scallions then stir into the eggs and rice. Season with salt and pepper as needed. Remove from the heat and serve immediately!

Notes
If using freshly cooked rice, dry it by spreading it on a heatproof tray before cooking. If you’re in a hurry, put it under a fan until it cools.
Vegetables – is optional but if you want to up your vegetables, use frozen mixed vegetables or sliced cabbage for convenience. You can also use fresh broccoli, cauliflower, and pak choi/bok choi! Cut into pieces then blanch in hot water before stir-frying with the meat for a softer texture.
Chicken Powder can be substituted with chicken bouillon. Dilute it in hot water before using it. Note: Cook the fried rice a bit longer if using diluted chicken bouillon to allow the liquid to evaporate before doing step 4.
