Inspired by Thai Pineapple fried rice I decided to make a Filipino version using our favorite comfort food, Adobo.

Pineapple Fried Rice Adobo

When making this recipe, I recommend using a regular Adobo dish which is the salty kind and not the sweet variation. The savory meat and sweetness and sourness of the pineapples need to be distinct when combined with the rice.

The husband thoroughly enjoyed eating this for dinner. He ate the whole plate in fact. Not a single morsel of rice was left for me. And that's the only compliment I ever needed.

Ingredients
 

  • 1 cup leftover pork or chicken adobo (cut into strips)
  • 3 tablespoons adobo sauce (with oil preferably!)
  • 2 cups cooked rice (i used brown rice)
  • 1 small onion (diced)
  • 1 tomato (sliced and seeds removed)
  • ½ cup pineapple cubes
  • green onions (minced)
  • pinch of salt
